Recipe Idea – Chicken Penang Curry
750g chicken breast strips (or deshelled prawns), 1 onion sliced, 1 flat tablespoon spice mix, 400ml can coconut milk, 2 teaspoons brown sugar, 1 red capsicum sliced, 100g sugar snap peas, 1tbs fish sauce, coriander leaves optional to decorate
Heat some oil in wok and brown chicken strips, add onions, spice, vegetables, fish sauce, sugar and stir for 5 minutes. add coconut milk and bring to boil. Simmer for 5 minutes and serve with rice. Optional – decorate with fresh coriander leaves.
Vegetarian Option – omit chicken and add a selection of chunky vegetables and tofu
