Recipe Idea – Vegetable and Tofu Curry
500g mixed fresh vegetables, 200g tofu, 2 onions diced (or if onion free required, chopped celery), large can diced tomatoes, 100ml coconut milk, handful cashew nuts optional
Brown Onions (or celery) in frypan, add 1 heaped tablespoon spice mix, add tomatoes and chopped vegetables, simmer 15 minutes. Finish with a few drops of lemon juice, coconut cream and serve with steamed rice.
